QUOTE(Ingredients) 1 cup stone ground yellow cornmeal 1/2 cup self rising flour 1 Tbsp sugar 3/4 tsp baking soda 1/4 cup frozen corn kernals 2 egg whites 1 1/4 cups fat free buttermilk Spray divided iron skillet with butter flavor cooking spray and place in cold oven. Turn thermostat to 425*F and let pan heat while you are mixing ingredients. Set your timer for 10 minutes so that you won't forget the pan. Combine dry ingredients. Mix eggs and buttermilk in separate bowl and just before the pan is heated combine the wet with the dry ( pour the wet into the dry). Spoon mixture into heated pan (be careful, it will be hot--protect your counter) and bake in 425 degree preheated oven for 15 minutes or until golden brown. Spray with fat free butter spray before serving. 120 calories and 1 gram of fat ![]() |
