Brown rice with corn, broccoli, green beans, 1 scrambled egg, and 1 small can of tuna altogether. Boiled with only extra virgin olive oil, no salt/pepper, nor any other seasoning.

With half a pound of salmon marinated in lemon with a touch of garlic.

That was last night's dinner. Other wise I just finished making a "meal replacement" shake lol.

A modified version of this recipe. My mom hates pine nuts so I'm using a store bought pesto, and instead of eggplant, I'm using zucchini, mushrooms, and spinach. Should be tasty.

Just finished up (well, about 10 minutes ago or so) breakfast burritos with eggs, potatoes, jalapenos, onions, diced ham and shredded cheese. It's a bit of a pain in the ass (since I'm a stickler for fresh ingredients) but my mom loves them and I wanted to be nice. :)

^ I made breakfast for my mom too. We had coddled eggs (although ours were baked as opposed to coddled), mine with spinach and mushrooms, and hers with the addition of Canadian bacon.
