I have intentions of traveling to Europe in the near future for an extended period of time, but the continent is huge, so I'd like everyone's opinions of European countries they've visited and where they had the most fun/what they did/etc. Because I can't see the entire continent, I'm in the process of creating a list of specific places to visit.

If you have been to multiple countries, what was your favorite place? How did you spend your time, and how much did you like it there? So far, I'm considering France, Greece, Italy, Ireland, and Spain, but if anyone has a more "exotic" place in Europe that's underrated, feel free to share.

Also, I've been trying to figure out for the past thirty minutes what those rides were wherein you get into a boat-like object, and you start pedaling on the water to move yourself, so it's a pedal-motored vehicle. What are those called?
