how big should i make my canvas approximately (in pixels) if i want to make something for a t-shirt? [the design will be in the center of the shirt]

A couple of thousand. Make sure the DPI (Dots Per Inch) is 300, which is the quality you want for something like that. (The default is 72, which is web quality.)
