Recipe: Rice Ortega, No one has posted one for a while, so here goes

This isn't the fanciest of recipes, but what I like about it is that the ingredients are in your typical pantry and refrigerator which means no last minute shopping.

Rice Ortega
Serves 8 (I use it for potlucks or family gatherings. Just cut the recipe in half for smaller gatherings)

1/2 cup onion, chopped
1 bay leaf (I've NEVER used a bay leaf, but it's in the original recipe so I'm listing it)
2 tablespoons butter or margarine (I'm a purist, USE BUTTER)
4 Cups cooked white rice (I'd recommend non quick cooking, long grain rice. But in a pinch, quick rice such as Minute-Rice will due)
1 cup cottage cheese
2 cups sour cream
1 (4 Ounce) can green chilies, diced
2 cups monterey jack cheese (you can use any cheese, but jack cheese melts really really well and is very creamy)

Saute onion and bay leaf (if you used one, just onion if you didn't) in butter or margarine; remove bay leaf (if you used one). Mix together onion, rice, cottage cheese, sour cream, chiles and 1 1/2 cups cheese in large casserole dish. Cover and bake at 375 degrees for 25 minutes. Sprinkle remaining 1/2 cupe cheese on top and bake, uncovered, 10 minutes more.
