i take home ec. classes at my school, and my teacher gies us food recipes each week to learn how to cook. so yeah..i got this recipe from her. =] enjoy. (i cooked this once and boy did it taste gUUd!!!!)

need
-1 cup fresh blueberries
-2/3 cup sugar
-1 & 1/2 cups flour
-1/2 tsp. baking soda
-1/2 tsp. salt
-1/3 cup oil
-2 eggs, beaten
-1/2 cup milk

DiRECTiONS

1. preheat oven to 375 degrees. Spray the muffin tin with a cooking spray or wipe.
2. put the blueberries into a colander and rinse them off.
3. in a large bowl, combine the sugar, flour, baking soda, and salt.
4.in a small bowl, combine the oil,beaten eggs, and milk.
5. add the liquid ingredients into the dry ingredients and stir together until they are just blended. (do not over mix)
6. fold the blueberries into the batter.
7. pour the batter into the prepared pan, so each cup is about 2/3 full.
8. bake 18-20 minutes, or until muffins are lightly browned and cooke throughtout.

TiP
*To test for doneness, insert a toothpick into the center of the muffins. If the toothpick comes out clean, the muffins are done. If there is batter on the toothepick, the muffins need to cook another 1-2 minutes. Then, test again with a clean toothpick.
