If you want to restore some color into a black and white color (or just do it for a nice effect) go to this site: http://digital-photography-school.com/blog...p-cs2-tutorial/
^ In this tutorial, they are using Photoshop CS2 but I'm pretty sure it works in other versions as long as it has a history tool and desaturating tool

Here's a good site that basically shows you how to fill a text with something, which in your case is a color gradient:

But in that little tutorial, see how one of the layers is named "Nature layer"? Rather than putting a picture in there, use the gradient tool to create the color you want.

to get only the bikini in color, i usually take the image, duplicate it, make the top layer BLACK&WHITE and then erase where the bikini is, so its in color like the first layer.

as for the text, try putting going to "BLENDING OPTIONS" on the layer pallete, and clicking "GRADIENT OVERLAY", and mess around with the angels.

an easier way to get only one part of any image colored is to take your lasso tool an outline what you want colored. copy it and then make the entire image black and white. then click paste and drag the part to where it was located before.
