I've been in a situation like that. Sometimes, people want you to respond with what you are actually doing. Others,though, want you to respond with "nothing." or "nothing much". It's confusing. I usually respond with what I'm doing because to me, "what's up?" and "what are you doing?" are almost the same questions. Other times, when I know the person will say "nothing" If I asked them that question, I just say nothing.
