umm.. my favorite cake is red velvet and i was just curious as to if any of yall had ever heard of it... blink.gif

idk if any of you are interested but i found the recipe for RED-VELVET cupcakes.

ingredients:
- 1 package of German chocolate cake mix
-3/4 cup buttermilk
-1/4 cup water
-1/4 cup vegetable oil
-3 large eggs
-1 bottle (1 oz.) red food color
-2 teaspoons white vinegar
(makes 24 cupcakes)

instructions:
Preheat over to 350°F. Line muffin pan w/ 24 paper cupcake-liners. Combine all ingredients in large mixing- bowl and mix on low speed for 30 seconds, scraping bowl occasionally. Beat on medium speed for 2 minutes. Divide batter evenly in cupcake-liners. Bake 20 to 22 minutes, or until toothpick inserted in center comes out clean. Cool completely on wire rack. Fost with buttercream.

butter cream frosting:
In large bowl, beat 2/3 cup softened butter until light and fluffy. Gradually add 4 cups powedered sugar, beating well. Mix in 1/2 teaspoon vanilla or cherry extract & up to 3 table-spoons half-and-half until desired consistency is reached. For colored frosting, slowly add red food coloring to mixture, one drop at a time until pink or red color is achieved.
