So what do y'all do when there is a person who you see almost everyday and she or he keeps approaching you no matter how uninterested in him or her you try to appear?

Completely ignore them and stare plainly into their eyes when they talk to you, with a bit of an underbite, and live with the guilt when they get the hint and leave you alone. It's worked for me many times.
Worst part for me is when I feel bad and are nice to them again, and then they start talking to me again, and then I repeat the process until they call me a jerk/douche and then I say, what did I do? I never said I don't like you, and then they say jerk/douche and never talk to me again. |
