Name: Caroline
Location: Brooklyn, specifically Crown Heights or Flatbush (woot for cheap locations!)
Theme: Upscale breakfast/brunch, with separate vegan/vegetarian and non-vegetarian menus.

Decor: I want drama. Everything's gonna be all dark and cherry wood, with a wall of (real) roses against the wall opposite the bar (the inspiration for the bar came from the Outkast song, "Roses"). It'll also have a performance space with a movable/rotating stage.

Drinks: brunch drinks, i.e. mimosas, bloody marys; fresh fruit juices; wine, fruit infused beer, TAP ONLY (no bottles); fruit beer and wine cocktails; shandies; various flavored mojitos; other breakfast-y type cocktails

Food: breakfast/brunch type of foods, for example: egg (or "egg") sandwiches, waffles, buttermilk pancakes; a guiness/chocolate stout affogato; boozy watermelon (!)

Name: The J Spot
Location: Hoboken, NJ Very mixed crowd like a mini Manhattan.
Theme: Half Lounge/Half Pizzeria What do drunk people love more than pizza?!

Decor: The lounge side would be very dimly lit. I would have a waterfall in there and the bar would be made of rocks and stones. There would also be a fireplace and a rediculous dj booth. I would also have a photobooth that people could use to take pics! The pizza side would be your basic pizzeria. The lounge would actually double up as a small cafe during the daytime.

Drinks: your typical liquor stock with predominantly imported beers and wine. All of my draft beer would definitely be imported and domestic would be bottled.

Food: Pizza side would obviously have Italian dishes while the cafe side would run along the lines of Marys Fishcamp in the village.
