I'm a senior in high school and I like a sophomore. We're friends and I asked her out on a date. She said she'd love to go out with me but her parents don't let her date older guys. Any ideas on ways to get around it or have her parents change their minds?

Then it's probably for the best. Some states have age of consent laws and if she's under that age and you guys do anything her parents can very easily turn around and say you raped her. Speaking from experience here...
