Do any one know how to do or know what this is called when you put a picture or face of a person in the size of a certain shape like in the following pics

I believe you're looking for Clipping Masks? Although I can't be too sure.
http://www.createblog.com/tutorials/tutorial.php?id=335 There are other ways to do this, I'm pretty sure. I need to refresh my memory a little bit.
