An olllld recipe of mine, harr. ;]
Yeah. It's Irish! There's history behind it, but I'm sure you don't want a history lesson in t3h cooking forum, now do you?

Irish Soda Bread

QUOTE
2- cups white flour
2- cups whole-wheat flour
½ -cup sugar
2 tsp. Baking soda
1 tsp. Salt
4 tbsp. Butter, chilled
1- cup raisins
1 ½-cups buttermilk
A pinch of Caraway Seed

Heat the oven to 350 degrees. In a bowl, combine the dry ingredients.
Cut in the butter until it is pea-sized. Stir in raisins and buttermilk. Turn the dough onto a floured surface, knead for one minute and shape into a disk. Cut an “X” in the top and bake on a greased baking sheet for 45-50 minutes. Makes one 8-inch-wide loaf.


Okay. Then there's this FREAKIN AWESOME fruity jam stuff that tastes really good on it.. mmm..

Fruit Compote

½- cup raspberries
1- cup blueberries

Add 3 cups sugar to mashed berries.
In saucepan, boil ¾ cup water and 1 ¾ oz pectin for 1 minute. Add hot pectin and water to berries and stir for 5 minutes. Put in an airtight container and chill in the refrigerator for a while.

My advice:: use a lot of Caraway Seed. It's really good.. unless you don't like the taste, of course, but you really need at leassst a little pinch. Try a seed before you put it in so you can regulate how much you want to have in there.
