Old Fashioned Sweet Potato Pone

(Sweet Potato Pie without the Crust)


3 Medium Sized Sweet Potatoes
1/4 Cup Butter, room temp.
2 eggs, separated
1/2 cup sugar
1/4 tsp. salt
1/4 tsp. nutmeg
1/4 tsp. cinnamon
1 tsp. baking powder
1/2 cup milk
1 tsp. vanilla or brandy extract (flavor)

Preheat oven to 450 degrees F.

Scrub potatoes thoroughly in cold water, place in a 3 quart saucepan, cover with boiling water.
Heat to boiling, then reduce heat to gentle boil, cover pan and cook potatoes until soft, from 20 to 25 minutes. Drain potatoes and peel while hot. Cool slightly. Beat in butter, then egg yolks and the next 4 ingredients and beat until smooth and creamy. Stir in remaining ingredients. Pour into a lightly buttered casserole dish. Bake at 450 degrees for 25 minutes or until pone is solid and lightly browned on top. (Optional - if you prefer, you can top pone with marshmallows, put back in oven until they are melted). Let pone cool before cutting.

well i dunno, dont really like sweet potatoes [maybe cuz i havent tried them?]

Sometimes. Not often tho. This is a good recipe. It's really good..

Never tried it, but from the ingrediants it does sound yummy.
