The first one looks like a strong outer glow. Right click the text layer and click "blending options" then click the outer glow options. From there, you can play around with the settings. The second one is a stroke. Instead of clicking outer glow, click stroke, and play around with the settings. The third one is either a really strong outer glow, or someone who just brushed the outline of the text on a layer underneath the text layer.
