For what program?
Well, if you're using Photoshop:

Right-click on the text layer, and go to 'blending options'. You should get a screen that looks like this:

[thumbed].

That's for the 1st image. The second is not a drop-shadow, but just stroke. You should see it in the above image :).

But, of course, you can make the lower text as light/dark as you want.
