I make some mean Blackened Chicken, and I just thought I'd share my recipe with you guys. If you have a taste for spicy food, you'll love this. Otherwise, you may want to spare burning off your taste buds.
-------------------------------------------------------------- Ingredients 6 Skinless, boneless chicken breasts 6 tablespoons butter or margarine 1 teaspoon garlic powder 2 teaspoons onion powder 1 teaspoon cayenne pepper 2 teaspoons paprika 1 1/2 teaspoons salt 1 teaspoon ground pepper 1/2 teaspoon ground cumin 1 teaspoon dried thyme Steps 1. Filet each chicken breast (slice each piece in half horizontally), making 2 pieces of about the same thickness. 2. Melt the butter or margarine in a small saucepan. 3. Combine all the remaining ingredients in a small bowl and stir to blend well. Brush the chicken pieces on both sides with melted butter or margarine, then sprinkle evenly with the seasoning mixture. 4. Heat a large, heavy frying pan over high heat until a drop of water sprinkled on the surface sizzles. 5. Drizzle 1 teaspoon melted butter on each chicken piece. Place them in the pan in an even layer, two or three at a time. Cook for 2-3 minutes until the underside begins to blacken. Turn and cook the other side for 2-3 more minutes. -------------------------------------------------------------- This may smoke up your house a lil. Make sure you have your stove fan on and you may want to turn off your smoke detector, unless you have someone standing by it waving the smoke away from it. (personal experience, lol).
