RECIPE: Broccoli Soup, with Cheddar Crust Options

This is a small portion of the recipe originally printed in Food and Wine magazine (no clue what issue).
Its a delicious lunch when combined with a good sandwich (as served at Chili's).

Ingrediants:
3 tablespoons of butter *Frozen stick butter is easiest since the tablespoons are marked*
1 pound of broccoli *Or one bag of frozen, which is already cut*
1 minced garlic clove
Pinch of dried tarragon
3 cups of chicken broth
1/2 of an onion
1/2 cup of whipping cream
1 1/2 tablespoons of flour
1 cup of shredded cheese

Preperations:
Half the butter and place one half in a small bowl with the flour
Cut the onion into small pieces
Mince the garlic, which just means chop it very finely
No one wants a mouthful of onion and garlic
Make sure the broccoli is in bite size pieces

How to Make the Soup:
In a pan melt half the butter then saute in the onions and broccoli for about 5 minutes
Add in the garlic and tarragon and saute for one minute
Stir in the chicken stock and let boil for about eight minutes
Stir in the cream
Add the rest of the butter and the flour (which thickens the soup)

Cheddar Crust:
Top the soup with a layer of cheddar cheese then broil.

Alternatively, I just mixed in the cheese and melt it into the soup instead of bothering with the broiler.

Feel free to half this recipe. I used a third of the ingrediants to make two bowls of soup.

Where I live at least. I almost always get the half a turkey sandwich and cup of soup combo with fries.

I've never actually tried Broccoli soup. I suppose I need to make some, because broccoli is my favorite
