There is another program that can add and delete things from the Ipod... oh i forget its name.. ugh... but yea, Itunes does move your music into the "Itunes Music" folder, or at least it does on Mac and I am guessing that is what you are referring to. All you have to do its tell Itunes where to store the music you add to it for example. "C:/blah/blah/music" Its in the preferences somewhere.
