i've got a zucchini/carrot bread baking in the oven as i speak...err...type. my first attempt at vegan baking.

i just had a piece for breakfast and it was great. i'll probably be the only one who thinks so though... i never cook with white flour, only whole wheat, so it is a little heavy and grainy. [also probably because of the ground flaxseed to replace the eggs]

i think it went well though. come on over and get a slice biggrin.gif

Yeah, replacing eggs is tricky. When I baked snicker doodles once, I used... I think it's baking soda, oil, and water, not sure of the proportions. They came out okay. Apparently, in cakes, you can use blended silken tofu, which I want to try next.

Next time you make your zucchini/carrot bread, try sifting the flour, and if that doesn't help its dense-ness, add a 1/2 tsp. of baking powder.

I was a vegetarian for 8 (almost 9) years, vegan for 4 of those years. I used to use tofu as an egg replacer, depending on what I was preparing. Now a days there are all sorts of things you can do.

This is a good egg replacer:

Then there's the classic:
1 egg = 2 Tbsp. water + 1 Tbsp. oil + 2 tsp. baking powder

Sometimes I'd use random things, like applesauce or bananas as thickening agents. Bananas work well with things like french toast, since it makes things sort of stick together, like an egg would. Applesauce works fairly well in baked goods, such as brownies.

On an entirely different note, last thing I made/prepared was bbq ribs, mashed potatoes, corn (they had a great deal for fresh corn on the cob at Kroger) and cheesecake.

I'm wary of using fruit as binders though, because wouldn't it taste like it? Well, I know it would taste like banana, but what about applesauce?

Depends. In the example of french toast, bananas work. If it were something else, might not. Sometimes you have to be creative and think about what foods would work together and what wouldn't work together. Also, some fruits taste entirely different when they are cooked. That's where experimentation comes in. I've never tasted applesauce in brownies.

Tofu is good because it typically will take on the flavor of other more potent ingredients. I just didn't find it to work too well as a "binder."

Edit: Right now (5:30PMish), grilling steak, fresh corn on the cob and baking potatoes. I wish I had one of those large glass containers to make sun tea in. They're so cheap, I just need to go out and get one.

but i just discovered that white suger isn't vegan [or vegetarian for that matter] as bone char is used in the bleaching process. so basically, no more packaged candy for me [not that i really eat it] xD

i just had tofu, rice and carrots. quite yummy.

Yeah, sugar's an iffy thing. I think for the most part that sugar producers have stopped using bone char -- I think I read that a little bit ago -- but I'm not sure. But I try to stick to organic sugar and demerara sugar for the most part.

i am so thankful there is an organic/vegetarian/vegan food store 2 minutes walk from my place. i don't know how i would survive otherwise.
i just did some research and apparantly beet sugar is not refined. i'm going to do more research though, as i have found some websites to be unreliable.

Well, most sugar is going to be refined (processed) in some way, cuz, you know, that's how they get the little crystals.

my boyfriend and i are baking vegan chocolate chip cookies right now. two more minutes until i have to take them out of the oven. it should be interesting... it's our own recipe.

i love cooking. i should have gone to college for that. i think i may have missed one of my callings.

haha. no, like i said before, i have no need to hide fat. it's just the magnificent work of my boyfriend's shitty fifteen dollar sanyo camera.
