I'm not talking about cereal. I'm talking about actual cooking/baking.

I've been in a real baking-type of mood lately, and last week I made two different kinds of scones (one cheddar-chive, the other oatmeal-buttermilk). I also made dinner for myself a few times last week, a big ass veggie shepherd's pie and broccoli and tofu in garlic sauce. And I did some sauteed peaches for dessert last week, too. I'm a cooking machine! showoff.gif

I made myself dinner the other day, it was sesame tofu with asparagus in this tasty vinaigrette. I made the asparagus in again yesterday. Then I made breakfast for myself today, it was kind of an omelette (except I flipped it, cuz I wanted it more like a tortilla than an omelette), filled with potatoes and Mexican cheese blend.

You know, my mom, because we ran out of buttermilk, the last time she made fried chicken she dunked it in some plain yogurt. I have no idea what it tasted like though. She said it was good.

For some reason, I thought it'd be cool so marinate the chicken in buttermilk and garlic and then roll it in wheatflour and flax and bake it on a rack in the oven.

The last thing that I made was beef tips and rice with steamed baby carrots and garlic toast.

I added garlic cloves and two cans of cream of mushroom soup to the beef tips, it was yummy.

If you just slap everything on there, the thing will collapse. Every ingredient has to be precariously positioned. A newbie, for instance, probably wouldn't know not to put the mushrooms on last, or else the bread molds into the shape of their contours, which weakens the structural support.

Moreover, I have to warm-up the bacon and chicken wings, which takes time. You also have to wait for them to cool, or else the cheese melts, removing the foundation that wraps the bacon strips together.

And Tabasco sauce has to be added incrementally on every layer, or else the spiciness becomes denatured in everything else going on and there won't be any physical pain upon eating it, which defeats the entire point of the manwich.

^ i don't like mushrooms or bacon so that will not be a problem haha. and you put chicken wings on your sandwich?! omg you have like literally everything on there. i prefer simple turkey+ham+egg+lettuce+italian seasoning+cheese+mayo sandwiches. oh and i think slightly melted cheese tastes good!



today for dinner, i made lemon peppered grilled chicken with a side of mac&cheese and a side of corn+mashed potatoes! it was deliciousssss!

for me probably eggs or rice krispies. i almost always cook for myself. i love eggs. i can make it any style..scrambled, sunny side up, omelet..etc. and i love improvising. and rice krispies is easy, just follow the instructions on the cereal box of pack of mini marsh.

Brown rice with corn, broccoli, green beans, 1 scrambled egg, and 1 small can of tuna altogether. Boiled with only extra virgin olive oil, no salt/pepper, nor any other seasoning.

With half a pound of salmon marinated in lemon with a touch of garlic.

That was last night's dinner. Other wise I just finished making a "meal replacement" shake lol.

Just finished up (well, about 10 minutes ago or so) breakfast burritos with eggs, potatoes, jalapenos, onions, diced ham and shredded cheese. It's a bit of a pain in the ass (since I'm a stickler for fresh ingredients) but my mom loves them and I wanted to be nice. :)

I used regular granulated white sugar though, as opposed to raw or natural sugar (which I'd use normally, except there's not much left) so the veganness of my cupcakes is relative (a lot of white sugars have been whitened with bone char, made from animal bones, so technically not vegan).

i just had a piece for breakfast and it was great. i'll probably be the only one who thinks so though... i never cook with white flour, only whole wheat, so it is a little heavy and grainy. [also probably because of the ground flaxseed to replace the eggs]

Yeah, replacing eggs is tricky. When I baked snicker doodles once, I used... I think it's baking soda, oil, and water, not sure of the proportions. They came out okay. Apparently, in cakes, you can use blended silken tofu, which I want to try next.

Next time you make your zucchini/carrot bread, try sifting the flour, and if that doesn't help its dense-ness, add a 1/2 tsp. of baking powder.

I was a vegetarian for 8 (almost 9) years, vegan for 4 of those years. I used to use tofu as an egg replacer, depending on what I was preparing. Now a days there are all sorts of things you can do.

This is a good egg replacer:

Then there's the classic:
1 egg = 2 Tbsp. water + 1 Tbsp. oil + 2 tsp. baking powder

Sometimes I'd use random things, like applesauce or bananas as thickening agents. Bananas work well with things like french toast, since it makes things sort of stick together, like an egg would. Applesauce works fairly well in baked goods, such as brownies.

On an entirely different note, last thing I made/prepared was bbq ribs, mashed potatoes, corn (they had a great deal for fresh corn on the cob at Kroger) and cheesecake.

Depends. In the example of french toast, bananas work. If it were something else, might not. Sometimes you have to be creative and think about what foods would work together and what wouldn't work together. Also, some fruits taste entirely different when they are cooked. That's where experimentation comes in. I've never tasted applesauce in brownies.

Tofu is good because it typically will take on the flavor of other more potent ingredients. I just didn't find it to work too well as a "binder."

Edit: Right now (5:30PMish), grilling steak, fresh corn on the cob and baking potatoes. I wish I had one of those large glass containers to make sun tea in. They're so cheap, I just need to go out and get one.

i am so thankful there is an organic/vegetarian/vegan food store 2 minutes walk from my place. i don't know how i would survive otherwise.
i just did some research and apparantly beet sugar is not refined. i'm going to do more research though, as i have found some websites to be unreliable.

I can cook, but Im lucky I dont have to. I taught my nine year old to make simple dishes for himself. I stopped cooking when I went back to work. Its so much more convenient to be able to come home and play with my kids, do homework, and not have to worry about anything else but laundry and cleaning.

Im a Realtor. I am on doing some work (I have to book a flight and hotel). My kids are done with homework, and they are eating. I will get off and give baths, and they will have their normal book reading, and off to bed. After that, I will get back on finish my work, and play around on the internet some more. I work from 7-3. I take my kids to school and pick them up. I have 4 kids. My oldest daughter has recitals, and my sons have sports. Im entitled to "me" time.
My husband is military, so my kids are used to not seeing him much, and so am I, (hence the divorce underway). I make sure my kids have quality time with me as much as possible. If that means I have to hire someone to do some things for me, I will. Laundry and cleaning is done at night after they are in bed.
Im not excusing anything. I just dont have the time, and dont want to cook. Especially with our busy schedule.
Im going to end it at that because now, we are WAY off topic.

I take my kids to school and pick them up. I have 4 kids. My oldest daughter has recitals, and my sons have sports. Im entitled to "me" time.
My husband is military, so my kids are used to not seeing him much, and so am I, (hence the divorce underway). I make sure my kids have quality time with me as much as possible. If that means I have to hire someone to do some things for me, I will. Laundry and cleaning is done at night after they are in bed.
Im not excusing anything. I just dont have the time, and dont want to cook. Especially with our busy schedule.
Im going to end it at that because now, we are WAY off topic.
Sorry CB posters. The fact that I made my baby was true, but it was a joke. It wasnt supposed to turn into what it is. Im not going to beat it anymore. Its dead.

You do indeed have a busy schedule and have 4 kids. I really dont get why you are on a place like cB then...

Honestly, why does it matter if she doesn't cook or doesn't like to cook? Of all the things that make a mother a good mother, cooking doesn't top the list. Sure, this probably wasn't the best place for her to bring up the fact that her child's birthday is rounding the corner, but I highly doubt she brought it up so that you could try to make her feel guilty about something that no one cares about (her cooking, not her children). I'm sure you'd rather have your mom pick you up from school and go to your recitals than be at home cooking.
