Erm.......same here, I'm not a fan of Americanised Chinese foods either........
Sorry, but I don't exactly know how to make the syrup either..........you can try finding it off websites.
I found this on a website, I'm not so sure if it is the kind of orange chicken that you're talking about.
Baked Orange Chicken*1 whole chicken (31/2 lb), cut up into pieces, or equivalent amount of selected chicken pieces
*1 TB tamari <=Its a Rich Japanese Soy Sauce
*juice of 2 oranges
*rind of 1 orange
*1 TB toasted sesame oil
*1 TB maple syrup
*1 onion, sliced
*1 red pepper, cut into 1/4 inch wide strips
Preheat oven to 400°F. If using whole chicken, cut up into pieces, skin if desired; set aside. Place onions and red peppers on the bottom of a large baking dish. Place chicken pieces on top. In pint jar, combine orange juice and rind, tamari, toasted sesame oil and maple syrup. Pour over chicken pieces. Place in preheated oven and immediately turn down the heat to 350°F. Bake for 25–30 minutes, basting two times. Turn up to 400°F again and bake for 5–10 minutes extra to help brown. Serve over rice or pasta.

Love it! I have a recipe for it somewhere at the apartment. It's relatively easy to do. I think you start off by cutting chicken in small pieces, dipping them in flour (lightly) and stir frying for a bit. Then you add some corn syrup, red pepper flakes, a little orange juice (and rinds if you have them), some garlic - that's a pretty decent start I think.

i think they're ok. my parents own a chienese and japanses restaurant but i have no clue what they add in there.
but i know there's dried orange peel added and then they add that sweet and sour sauce and maple syrup then some tamari.
