Yeahh. I got this in my North Dakota cookbook, as well.
It's quite good. ;]

Scandinavian White Fudge

QUOTE
2 1/2 cups sugar
1 cup milk
1/4 pound white chocolate
1/4 cup butter
2 tablespoons light corn syrup
1/4 teaspoon salt
1 teaspoon white vanilla
3/4 cup chopped macadamia nuts
1/2 cup chopped candied cherries

Butter an 8-inch square baking pan. Set aside. In a medium-sized heavy saucepan, place first six ingredients on the list.

Cook over moderate heat, stirring occasionally until the temperature of the mixture reaches 236 degrees (F) on a candy thermometer. (Mixture will form a soft ball when a small amount is dropped in cold water.) Remove mixture from heat immediately; cool to 110 degrees (F) or until lukewarm.

Add vanilla; stir vigorously with a wooden spoon until mixture is thick adn begins to lose its closs. Quickly stir in nuts and cherries. Spread in prepared pan. Chill. Cut into squares. Makes 25 1 1/2-inch squares.
