Full Version: Chicken and Spinach Lasagna

Yeah this isn't low fat...sorry kidos.

Prep time: about 10 minutes Cooking time: 20 minutes Makes: 6 servings, but if you're feeding hungry people...like 3 servings.

-1 tbsp margarine or butter
-1 lb. boneless, skinless chicken breast halves, cut into 1/2-inch strips
-1 package Betty Crocker Hamburger Helper Surpreme Four Cheese Lasagna [yes, for lazy people such as myself]
-2  1/2 cups hot water
-1  1/4 cups milk, divided
-1 package (10 oz.) frozen chopped spinach, thawed and squeezed to drain
-1 can (14 oz) diced tomatoes, drained


Yeah, a lot of ingredients but it's worth it. Yummy...I ate it yesterday.

Procedure:
1) Melt butter in 10-inch skillet over medium-high heat. Add chicken and cook 3 to 5 minutes, stirring frequently, until golden brown.
2) Add Sauce Mix, hot water and 1 cup milk to chicken.
3) Bring to boil, then stir in uncooked pasta and return to a boil.
4) Reduce heat; cover and simmer 15 minutes, stirring occasionally.
5) Add spinach and tomatoes to skillet. Remove from heat.
6) Combine Supreme Topping MIx and 1/4 cup milk; mix until almost smooth.
7) Stir chicken mixture. Pour topping over chicken evenly. Let stand about 5 minutes to thicken sauce.

*Want a quick meatless dish? Use 3/4 cup coarsely chopped onion and 1 can (4 oz) mushrooms [fresh is better], drained, in place of the chicken.

Enjoy...this is so good. I'm so hungry now. =P

ack without spinach, i would eat it hehehe but the rest makes my stomach growl loud haha
