I just spotted this subforum so I thought I'd start it off. I'm a huge Cajun Jambalaya fanatic. Everytime I go to Copeland's or the Cheesecake Factory, I always spend $15+ for the entree. This hasn't been very good to my bank account, as you could imagine, so now I just wanted to ask you guys if any of you use or know of any great recipes for this dish so that I can learn to make it at home.
