from what i know you cant select multiple things?

Well of course it is a photoshop tutorial. CS3 is different from 7 but not THAT different. When you say select multiple things if you are using any of the lassos or the marquee tools if you hold down shift I belieeve you can select multiple things. Either hold it down or press it once. One of those.

Clipping masks can also be done in photoshop 7 too so just try it.
