Recipe sites:
All Recipes - HUGE vegetarian section. Most of the recipes can be scaled down. It's a favorite of mine.
Shmooed Food - Vegan recipes, some call for out there ingredients, but there are usually substitutes listed. Lots of desserts and baking related stuff here.
Recipezaar - Another fave of mine. A lot of the recipes here are complicated, but worth the work.
30 Minute Meals - A lot of her recipes can easily be made vegetarian by subbing veggies for meat or meat substitutes instead of meat.
Pre-Packaged / Quick Fix Foods
Hmm...look for a brand of foods called
Fantastic Foods. They make box and package foods similar to Rice a Roni and Hamburger Helper. Most major grocery stores in the US carry them, although the selection is sometimes lacking. Campbell's soups makes vegetarian [not vegan!] soups that are tasty and not too expensive. Mac N Cheese is vegetarian and there are organic and vegan brands out there.
Another brand of foods to look out for is
Lightlife. They're a bit pricey, but some Wal-Marts and major chainstores carry them. I adore their pre-packaged meals like southwest chili and pulled "pork". Also, their burgers, meatballs, and bacon substitutes are awesome.
I Can't Believe It's Vegan - Common everyday foods that just happen to be vegan. If they're vegan, then they are safe for vegetarians. Very helpful, in my opinion.
