For skype. Your mic is constantly on.
For ventrilo you have a hotkey you can choose to hold down and you can talk.
And theres the ability to have more people talking
as for skype the max you can have is 5 people in a conference with out paying.
As for sound quality. The ventrilo server I own is just as good as the skype quality.
I've also fixed settings in the vent server so that you won't be aggrivated at people who attempt to ruin the enjoyment of the server. Such as spamming text to speech binds.Baned.
Attempt to move in and out of channels real fast. Banned.
I don't think it was mentioned that anything was wrong with Skype, Ventrilo is just an alternative. You don't have to sign up for it (at least I didn't). You type in a username and then use the password provided to get into a specific IP/Hostname and Port Number.

Those are really vague and cheesy examples, but maybe that will sort of give you an idea.
I typically use the left shift key as my hot key to talk. I never cared for TeamSpeak and admittedly haven't used Skype all that much.
