This is oriented more towards college students, but feel free to mention any if you're in high school.
I wish I had course descriptions, but anyway, here are a few:

I can't wait till college, I love those human minds and psychology stuff, but too bad I couldn't take this class until my senior year. =(

Well, if you're a junior or senor in my school and have completed credits for something, you can take some college courses at York College for free.
I don't know the courses you can take though.

I think we have a bowling class? Or at least we used to. But really, we don't offer anything interesting, in the abnormal sense. Typical of high school, I suppose, but generally unappreciated. There's pretty much nothing else offered that I want to take and am not already taking, which is why I really an extra band class next semester, just because I have no better options.
(Haha, that was strange. I sat here an posted as I looked at Mona's avatar, and by the time I was done typing, she had a different one.)

The History of Math. I really really really wanted to take that class to get out of my math distribution. But, I'm currently waitlisted :(
There's also a history class on Witches, Wizards, etc. offered next semester, but I'm not taking it.

I think we had Underwater Basket Weaving or something? But I think that basically meant Oceanography.

I know this is mostly for college students, but the most interesting class in my high school is TV/Video Broadcast. In a way, it's like photo, but instead of taking a camera or whatever, you have to make segments and stuff. We also host school announcements during 3rd period. :]
Haha, not as cool as Ultimate Frisbee, but hey. xD

Anyway, we have some cool fitness classes. There was yoga fall semester. Right now they offer multiple levels of snowboarding and skiing. I think we have a self-defense class. Some cool music ensembles/classes include a vocal jazz group (including voice and instruments) and also specialized musical theater. Another class that sounds interesting is Asian Jews, where an old Jewish woman from India is coming in this semester and giving a musical performance.

I have NO idea how you can get a D- in Frisbe. All I can think is he was just goofing off and getting in trouble in the class.

I'm in high school and
we have a CSI class, and a CSI PA (the state) wildlife class.
I think a lot of schools have anatomy, but in my school's anatomy classes, we get to disect cats. i jstu got done with it last week. it was pretty damn cool. i knwo a lot of ppl dont get to that until they get to college.

A CSI class would be similar to foresics, right? I would definitely take it. :D
Ew. That sounds nasty. I remember dissecting a frog in the 8th grade, another frog in the 9th grade, a fetal pig (they were huge for a fetal animal!) and a sheep's heart in the 11th grade and a cow's eye in the 2th grade.
LOL, poor Suzzette. You can come to Canada and take my classes for me.

It's very messy depending how much you're dissecting. At times, whatever substance used to replace the bodily fluid will squirt out. I remember I had to examine a lot of things and certain organs got in the way. Moving/removing the intestines were too gross; not only were they extremely long but if you punctured them, partly digested food would flow out. The worst part was cutting the sides of the mouth. Neither a scissor nor scalpel was very effective.

Oh goody, dissecting pigs! It's exactly like Mona said, but there were some kids in my class that were just messing with it. They even gave the pigs names or chopped the head off and switched it with another pig.
We have about the same courses as everyone else, but if they were to have a Psychology course, I'd haila force my way into it. I know that it's offered elsewhere, but around here, not so much.
